My favorite recipe

I found this recipe on a DVD that came with a book of recipes that Eric bought for me our first Christmas married... I have made it simply dozens of times since I discovered it and I fell in love with it. Today I tried the recipe using Bananas instead of pumpkin because I had some bananas that were going to go bad. It turned out delicious! So I thought I'd share it with all!

Chunky Pumpkin/Banana Apple Bread

1 1/2 Cups Sugar
1 cup Canned Pumpkin/Purred Banana (about 2 bananas purred in a blender)
1/2 cup water
1/3 cup vegetable oil
2 eggs
1 2/3 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon baking powder
1/4 teaspoon ground cloves (I don't have these so I leave them out and it tastes great anyway!)
1 cup chopped peeled tart apples (I usually double this because I love the apple chunks)
3/4 cup chopped walnuts

In a large mixing bowl, combine the sugar, pumpkin, water, oil and eggs; mix well. Combine the flour, baking soda, salt, cinnamon, nutmeg, baking powder and cloves; add to the pumpkin mixture. Beat on low speed just until moistened. Fold in apples and walnuts.

Pour into a greased 9 in x 5 in. x 3 in. loaf pan. (Or if you want to do muffins, 350 for about 25 minutes). Bake at 325 degrees for 1 1/2 to 1 3/4 hours or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

Try them!
